(Serves any number) Beat eggs in a microwaveable mug until well blended. Season lightly with your choice of salt, pepper, dill, parsley, paprika, oregano, onion powder or chili powder. Microwave on medium, stirring with a fork every 30 seconds until cooked. Stir in 1 or 2 tablespoons (15 to 25 mL) of shredded cheese; set aside for about a minute, until cheese melts. While you're waiting, warm a large flour tortilla in the microwave on high for 10 seconds. Spoon the egg mixture along the centre of your warmed tortilla. Top with chopped cilantro, avocado, jalapeños and/or salsa. Roll up and eat -- not over the sink, please! Difficulty level: Easy.
