Gluten-free Brownies (1)

These brownies were outstanding slightly chilled. Intense, chocolate-y and tender.

(Makes 9-12 servings)

Ingredients:

  • 3/4 cup gluten-free flour (almond & sweet rice flour)
  • 1 cup sugar (brown or white)
  • 5 Tbsp cocoa
  • 1 tsp salt
  • 1/2 cup shortening (butter, or gluten-free margarine), softened
  • 2 eggs
  • 1 tsp vanilla extract

    Preparation:

    First melt the shortening in a glass bowl using a microwave oven, then add the rest of the ingredients.

    Add 1/2 cup of nuts, etc., if desired.

    Spread in an 8x8-inch baking pan.

    Bake at 350 degrees F for 30 minutes. Cool. Cut. Wrap and freeze.

    Difficulty level: Easy.
